Leave the frozen banana & Boost Me Ginger sachet out on the side at room temperature for 5 minutes to let them thaw slightly. Take the packaging off the frozen Ginger sachet with scissors, chop it into smaller pieces and put this in a food processor with the frozen banana. Blend until the fruit is broken down and there are no large chunks left.
Add the coconut yoghurt, vanilla and salt and blend again, scraping down the sides as needed. Then, add the coconut milk slowly the fruit starts to come together, and you get your desired thickness – it should be a thick soft serve texture. Keep blending until smooth; this takes a little while put persevere! Scoop into a bowl, top with coconut flakes and enjoy.
