Pear, apple and almond recipe

Serves approx 10

INGREDIENTS:

  • 2-3 tablespoons maple syrup
  • Flaked almonds to serve
  • 1 cup ground almonds
  • 3/4 cup spelt flour
  • ¼ teaspoon salt
  • ¼ cup rapeseed or vegetable oil
  • 1/4 cup maple syrup
  • 1 small apple
  • 1 small pear
  • 1 Swisse Me Pear Ready-to-Drink Smoothie
  • Flaked almonds to serve

 

METHOD:

 

Preheat oven to 170c and grease an individual muffin tray with oil.

To make the crusts, simply mix together the ground almonds, flour and salt, adding the maple syrup and oil to bring this together – this is easiest to do using your hands! Once this comes together, press a small amount into 5-6 of the muffin trays until they have an even covering of pastry with no holes – this should be thick enough to no longer be see-through but be careful not to make them too thick! Prick the tart cases all over with a fork and put in the oven to bake for 10 minutes.

For the filling, chop up the apple and pear into small cubes (keeping a few thin slices of pear as this looks nice on the top of the tarts!). Mix the fruit in with the maple syrup and Swisse Me Pear Ready-to-Drink Smoothie and stir well.

Once the cases are golden, take them out the oven and add the fruit to the tart fillings. Bake with another 12-15 minutes. Drizzle with sliced almonds and maple syrup to serve.
