Boost Me Spinach Slaw Recipe

Serves approx 4-6

 

INGREDIENTS:

Veggies:

1/2 small red cabbage
2 carrots
1/2 apple

Dressing:

1/4 cup vegan mayo
1 sachet Swisse Me Spinach Ready To Drink Smoothie
2 tbsp wholegrain mustard
2 garlic gloves, minced
1/8 cup olive oil
3 tbsp apple cider vinegar
3/4 - 1 tsp salt
Black pepper to season
1 chopped red chilli or 1 tbsp your favourite hot sauce (optional)

 

 

METHOD: 

In a large mixing bowl, thinly shred the cabbage and apple and grate the carrots. In a separate bowl or jar, mix together all the dressing ingredients, seasoning to taste.

Pour the dressing over the shredded veggies and mix well using your hands. This can be served straight away but tastes best with at least 30 minutes to marinate in the fridge!
