Preheat the oven to 160c. In a large mixing bowl, mix together the oats, nuts, seeds, cinnamon, coconut sugar, salt and instant coffee and place to the side.
In a separate smaller bowl, mix together the Swisse Me Coffee Date Ready-to-Drink Smoothie, maple syrup and oil. Once well combined, add this to the bowl of dry ingredients until everything is well covered.
Spread a thin layer of the mixture on to a large baking tray and bake for 20-25 minutes, taking the granola out to give it a good stir every 10 minutes. Once golden brown, remove from oven and allow to cool. Chop the dark chocolate into very small chunks and scatter this through the granola before storing in an air-tight container.
